“It has this delicate flavor that is so expressive I had to build a beer around it,” he said. “All of our beers are ingredient-driven.”
In addition to the brewery, there is a space for a restaurant on the other side of the building and for offices upstairs. Irby said he’s eager to see what might join him in the space, but he knows he won’t have any hand in running it.
“I’m a pop music junkie,” Carson said.
But pressure is how diamonds are made, and the beer-loving brewers know they’re canning some gems.
